Palazzo di Varignana is a resort nestled in the hills of Bologna and created around Palazzo Bentivoglio, a country castle dating back to 1705, renovated respecting the charm of its history. An original and sustainable hospitality model of 150 rooms, several restaurants, elegant spaces dedicated to ceremonies, events and conferences with innovative technological equipment. A wellness offer in the Varsana SPA, remise en forme programs, sports fields and outdoor trails complete the picture. Over time, the recovery project has also involved the surrounding area: in fact, Palazzo di Varignana has chosen to recover ancient farmhouses, transforming them into six luxury villas and enhancing their wealth by starting its own farm. A set of lands from which high quality zero-mile products are born and a new hospitality proposal, thanks to the Country House Oliveto Sul Lago, a farmhouse with restaurant, swimming pool and 12 rooms. Established in 2015, the Palazzo di Varignana farm now has over 650 hectares of land. Thanks to the restoration of the ancient varieties of native olive trees, extending over 265 hectares, we produce an Extra Virgin Olive Oil among the most awarded and recognized in the world. The properties are completed by 57 hectares of vineyards, three thousand meters of vegetable garden, a vast orchard that welcomes Goji berries and a very original and rare production of saffron. The Palazzo di Varignana branded product line includes 7 types of excellent Extra Virgin Olive Oil, of which five Monocultivar and two Multivarietal, 6 references of Wine, Albana Romagna DOCG, Chardonnay Colli di Imola, Sangiovese Superiore DOC and Pinot Nero Rubicone IGT, Villa Amagioia Blanc de Noirs Metodo Classico Brut, Villa Amagioia Blanc de Blancs Metodo Classico Brut.
